Cheese Soufflé Recipe I Translated for French Class!

Ingredients for Cheese Soufflé:

1.3 cups of milk – 4 eggs – ¼ cup of flour – 1 cup of grated cheese – ¼ cup of butter – 1 pinch of ground nutmeg – salt – pepper

Steps for Cheese Soufflé

Melt two tablespoons of butter and brush – on and 8-inch soufflé pan. In a big pan, melt the remaining butter, pour the flour on a sifter (to get out the lumps) and cook for a few minutes on low heat, stirring with a wooden spoon. Pour the milk on the net, continue to stir for 5 minutes until sauce gets thick and smooth.

 

Preheat the oven to 356˚F. Crack the eggs and separate the whites and yolks. Apart from heat, incorporate one by one the yolks of the eggs to the sauce by whipping vigorously with a whisk. Add the grated cheese, salt, pepper, ground nutmeg, stir well.

 

Beat the egg whites until very stiff. Carefully incorporate mixings, but without stirring by lifting the mass high up and down without “breaking” the whites. Pour it all into the pan, pass the blade of a knife all around the inside of the pan to loosen the dough (the soufflé rises regularly). Practice cutting some on the surface with the tip of a knife. Bake for around 35 min. Serve immediately.
